2 pounds fresh tomatoes, chopped
4 tablespoons olive oil
1 medium onion, chopped
4 cloves of garlic, crushed
Salt and pepper
- 1 tablespoon chopped fresh basil leaves
In a medium pot over medium-high heat, add the olive oil and onions. Cook until onions are translucent - about 5 minutes. Add the garlic, then add the salt and pepper, to taste.
Cook for another minute. Add the basil, sugar, and tomatoes. Reduce the heat and simmer for 10 to 15 minutes.
Cool completely. Blend in food processor or blender until desired thickness is reached.
Store in jars and refrigerate.
If canning, process pints for 35 minutes and quarts for 40 minutes.
