Dehydrating Tomatoes

Drying tomatoes is very simple. It's a wonderful project you can have your children help you with. You can dry tomatoes in the sun, the oven or a dehydrator.  

What you'll need
Dehydrator
Fresh Tomatoes

Directions
Wash and drain tomatoes. Pat dry.

Slice the tomatoes or quarter them. Below I've cut cherry tomatoes in half. For larger tomatoes you'll want to slice them about 1/2 in thickness. Remember they are going to dry, so don't slice them too thin.

Place tomatoes evenly on dehydrator trays and process until dry and leathery.

Fill mason jars with tomatoes and cover with olive oil.  Seal and store in a cool dry place. Use in salads, soups and bread recipes.
