These patties are delicious as a side dish or for sandwiches.
1 lb lentils
1 cup finely diced onion
2 cloves garlic
1 cup finely shredded carrots
1/2 cup finely shredded cabbage
1 1/2 cups bread crumbs
2 large eggs
1 large,ripe (red) jalapeno pepper (optional)
1 tsp salt
1 tsp pepper
1/4 tsp cayenne pepper
1/4 tsp garlic powder
1/8 tsp cumin (optional)
1/4 tsp turmeric
Pre-heat oven 350 degrees
Cook lentils in large pot covered with water 15-20 minutes or until tender, drain and cool.
Beat 2 large eggs add salt, pepper, garlic powder and turmeric to egg mixture and stir well.
Add the remaining ingredients to lentils and mix well. Shape into patties and place in 9x13 baking dish coated with olive oil. Bake at 350 degrees for 20 minutes.
You may add another egg and more bread crumbs for a more "meatier" texture.
