Mashed Potato Cauliflower (without the potatoes of course).

It's surprising how a simple change in the way you bake, broil, grate or chop a vegetable it takes on a whole new personality, taste and texture. I've had cauliflower simply steamed with butter and seasonings. However,  once I tried this method, it is different. I love it. it's now a regular in our house. Children will love it also.


1 head of cauliflower
2 tablespoons of Whole Cream or Milk
1/2 tsp dried or fresh parsley 

Wash cauliflower and remove green leaves
Steam cauliflower until tender about 7-10 minutes
Add cauliflower, butter, cream or milk in a food processor and blend well or 
add all the ingredients in a large bowl and use a potato masher and blend well until creamy.
Add salt and pepper to taste, garnish with parsley

Serve hot.

Adjust the ingredients to your taste. 
You can also add Parmesan cheese, crushed garlic or fresh spring scallions.
