Candied Carrots

1 pound carrots
1/3 cup brown sugar
1 teaspoon vanilla
1/8 teaspoon cinnamon
1/8 teaspoon cumin
2 Tablespoons butter
Pinch of salt

Gather carrots, wash and slice them in even sizes
In a medium pot cover carrots with water and bring to a boil, lower heat, add cinnamon, vanilla, pinch of salt and simmer for 5 minutes.
Remove from heat.

In a separate pan melt butter and add sugar and cumin. Simmer for 2-3 minutes while stirring constantly. Drain carrots and add to sugar and butter sauce. Simmer for 5-7 minutes, stirring constantly. You don't want the sauce to dry out or stick to the pan.
