Navy Bean Salad With Fresh Herb Vinaigrette
























Ingredients
2 Cups cooked navy beans
1 Cucumber dice
2 Avocados, chopped
1 cup cherry tomatoes, sliced in half or whole (optional)
1 Red onion chopped
1 Red bell pepper diced
1 Yellow or orange bell pepper diced
4 cups of spring salad mix, or your choice of lettuce chopped. 

Mix the above ingredients in a large bowl. Serve with your choice of a vinaigrette dressing.
