Roasted red peppers.

Pre-heat oven to 450 degrees
Rinse peppers (Do not peel)
Coat peppers with olive oil
Bake in oven on a cookie sheet until peppers begin to blister and are tender.
Place peppers in a brown paper bag and let sit until cool.
Remove peppers from bag and remove skins.
Place peppers in a mason jar and cover with olive oil. Place in refridgerator until ready to use. 
Great in salads, salsas and for sandwiches.
