1 head of Cauliflower
1 cup of Bread Crumbs
1/4 teaspoon salt
1/4 teaspoon black pepper
Pinch of cayenne pepper (optional)
Pre-heat oven to 400 degrees
Slice cauliflower into half inch slices or break into 2 small bite size florets
Whisk eggs, peppers and salt together in a bowl.
Coat Cauliflower with egg batter, then dip into bread crumbs and place on a cookie sheet.
Bake for 20-25 minutes until browned and tender, turning once in about 15 minutes.
Remove from oven and serve.
