These can be baked or fried.
2 small crowns of broccoli florets chopped or 10 oz package of frozen broccoli
1/2 cup bread crumbs
2 medium or large eggs1 cup shredded mild cheddar cheese
1/4 teaspoon garlic powder
1/2 teaspoon dried oregano1 teaspoon dried basil
For baking: Preheat oven to 375 degreesCoat a baking sheet with oil or spray with non-stick cooking spray and set aside.If using frozen broccoli, cook broccoli according to package directions and chop into small pieces. If using fresh broccoli, chop and steam until tender. Drain well and pat dry.
In a medium bowl, whisk eggs.Add remaining ingredients to bowl and mix well. Shape the mix into 1 1/2 -2 inch ball and place on the baking sheet.Bake in the preheated oven for 20-25 minutes, turning the bites over half way through the cooking time.
Directions for Frying: Add a little olive oil or corn oil to a medium frying pan, just enough to cover the bottom. Add the bites and turn frequently browning on all sides.
