Cheesy Mashed Cauliflower

It's surprising how a simple change in the way you bake, broil, grate or chop a vegetable it takes on a whole new personality, taste and texture. I've had cauliflower simply steamed with butter and seasonings. However,  there's a surprising difference that's quite yummy when it's whipped like mashed potatoes. Children will love it also.

1 head of cauliflower (about 2 lbs)
1/2 cup parmesan cheese divided
2 tablespoons butter
1 clove crushed garlic (optional)
1/3 cup of heavy cream or half-and-half  
1/2 tsp dried or fresh parsley

Wash cauliflower and remove green leaves, break into floret pieces
Steam cauliflower until tender about 7-10 minutes

Mash cauliflower to desired consistency. Stir in 1/2 cup cheese, cream, butter, garlic. Sprinkle with remaining cheese. Add salt and pepper to taste, garnish with parsley
Serve hot.
