Creamy Avocado Spread

Avocados are so versatile. This recipe can be used for sandwich spreads, wraps and quesadillas. Makes a great substitute for mayonnaise and great for vegans recipes.  


2 ripe avocados
4 tbsp extra-virgin olive oil
2 tsp dijon mustard (optional)
2 tbsp lemon juice
1 garlic clove (optional)
1/4 tsp black pepper
1/4 tsp sea salt


Cut Avocado and remove seeds.


Scoop out the flesh and combine all ingredients in a food processor or blender or place in a small bowl and use a hand blender. Blend on low to medium speed until smooth.
Adjust seasonings as needed.
