Traditionally Greek Salad does not contain lettuce or cucumbers, but this is how I like mine.
You can work out the portions of these ingredients to your liking:
Boston or Romaine Lettuce
Kalamata Olives or Black Olives
Chop the above ingredients and toss in a bowl, drizzle with salad dressing.
For dressing use your favorite vinaigrette or the following:
1 cup good quality olive oil
1/2 cup red wine vinegar
1/2 cup fresh squeezed lemon juice
2 teaspoons Dijon mustard
2 1/2 teaspoons (each) garlic powder
2 1/2 teaspoons basil
2 1/2 teaspoons oregano
2 1/2 teaspoons onion powder
1/2 teaspoon sea salt
pepper to taste
- Combine all the ingredients together minus the olive oil
- Slowly drizzle the oil into while whisking briskly until combined.
