Spicy Lentil Patties (Vegan)


1 cup red lentils
1 small bunch parsley, chopped
1 medium onion, diced
4 Tbl psyllium husks (for vegan) or one large egg
4 Tbl nutritional yeast flakes
2 bell peppers
1/2 cup bread crumbs or flour of choice
2 tsps smoked paprika
1 tsp spicy paprika
1/2 tsp chili flakes
Sea salt and ground pepper, to taste oil, for frying

1. Add lentils in a pot and cover them with water. From the moment they start boiling, let them boil for about 15 minutes and then remove from heat.
2. Strain the lentils really well and put them in a large bowl. Mash lentils  using a fork, potato masher or hand blender. Add the rest of the ingredients, except oil.

3 mix well and shape into patties 3 inches wide. If mixture is too sticky add more flour or bread crumbs until dough can form It has to be sticky and easy to shape and keep a form.

4. Spray pan with some oil. Not too much. Put each patty on the frying pan and let it fry about 2 minutes on each side.  Remove patties and drain on paper towel.
