Growing Bok Choy

Bok Choy also known as Pac Choi is type of Chinese cabbage. It features a mild cabbage-like flavor. Bok choy is a cool season vegetable like all the cruciforms. However, it is more tolerant of extremes than common cabbage. You can sow in spring or late summer for a fall harvest.

Bok choy is ready to harvest as soon as it has usable leaves. The small varieties are mature at 6 inches tall and the larger types grow 2 feet tall. The baby varieties are ready in about 30 days and the larger ones are ready four to six weeks after sowing.
 

Bok choy requires partial shade to prevent bolting. If you allow the plant to bolt, it will form flowers and seed, providing a bok choy seed harvest. The seed is housed in pods that you take when the husks turn brown and dry. This signals the seed is ready. Store seed in a cool, dry place until it’s time to sow them.
 

Plant bok choy seeds or seedlings outside as early as 2-3 weeks before your last average spring frost and as late as few weeks before your first average frost in the fall.

“Baby” bok choy. Plant “baby” or “dwarf” bok choy seeds 3-4 inches apart (9-12 per square foot) in all directions. Cut entire mini-heads off at the soil when they are the size you want or as soon as you see the tip of a flower stalk rising out of the center of the leaves. For a continuous supply, plant a few dozen seeds every 2 weeks throughout the spring and again starting in mid-summer for fall harvests.

Whole mature plants. Ready to harvest in 40-60 days. Plant seeds or transplant seedlings 6-8 inches apart (2-4 per square foot) in all directions. You can shorten the time in the garden by starting seeds in pots or flats and transplanting the seedlings into the garden when they are two weeks old. Start transplants as early as 4-6 weeks before your last average spring frost, and plant transplants or seeds outside as early as 3-4 weeks before your last average spring frost. For a continuous supply, plant a few seeds every 2 weeks throughout the spring and again starting in mid-summer for fall harvests.
